Lazy Cooker Baingan

imageA simple quick meal…of steamed alu baingan in a thin flavorful curry that can be put together in 15 minutes flat. Great for lazy weekends …when you can first enjoy the meal and then indulge in a lazy afternoon siesta! 🙂

Preperation…

1 cup tomatoes puréed with 1 inch ginger and 2 green chillies.

2 washed and peeled potatoes cut into large pieces

8-10 mini baingan slit from the middle, but with the ends still attached.

Method:
Heat 2 tsp oil in a pressure cooker.
Add a tsp of jeera, the tomato ginger purée along with 1/2 tsp red chili pwdr, 1/4 tsp each of haldi and dhania pwdr (optional) and salt to taste.

Next add slit baby baingan

and the potatoes and 1 1/2 cup water.

Give 2 whistles in the pressure cooker. Open in 10 minutes…garnish with fresh dhania…enjoy with plain steamed brown/white rice!

Note: you can also make this dish with basic onion-tomato masala. If you have it ready on hand, this dish can be made in 5 minutes flat! 🙂
