Matar Stuffed Baked Baatis

Technically Baatis, these delicious baked Whole-wheat Kachori like treats are a delicious alternative to Deep-fried Maida Kachoris! We love to eat them with spicy green chutney and some hot Tea or chilled Pudina Chaach!

For the Baati/ Baafle dough
2 cup atta
1/2 cup sooji
1/2 cup besan

Add 1/3 cup oil

Mix in the oil and try to form loose muthis….as shown in the pic. If the muthis do not form, add a little more oil.

Now using a little water make a stiff poori like dough.

Break small portions of dough. Fill liberally with spicy peas and potato (optional) filling.

Seal carefully and flatten into round discs.

Boil water with a little salt and oil. Simmer Baatis in the water till they rise to the top.

Using a wire mesh, gently take out baatis.
Place them in a clay pot lined with aluminum foil that has been rubbed with some ghee/oil.

Brush the top of the baatis lightly with some ghee/olive oil for even uniform browning.

Place clay pot in a cold oven. Then switch on oven to 375F and bake for about 1 1/2 hour.

Flip sides in between.

In the last 15 minutes….increase oven temperature to 400F and bake till the baatis turn a deep golden.

For the filling:
Heat some oil. Splutter jeera. Follow with minced ginger and green chillies. After a minute add boiled peas and diced boiled potato (optional). Also add salt, red chili pwdr, dhania pwdr, amchur, garam masala and a little coarsely ground saunf. Bhuno for 5-6 minutes. Coarsely pound some of the peas and potato(if using), leaving some intact. Stir in some freshly chopped dhania and cook for another 2 minutes…ready!
