No-Fry Vada Bhara Pau

India’s Vegetarian answer to the Burger and the single most popular street food along with chaat… It excites overwhelming emotion in the best of us!

But for the health conscious among us, eating the deep fried vadas, is an occasional guilty indulgence. So I decided to reinvent them in this convenient healthy avatar.

It’s just as delicious as the original and has the added Grab n Go advantage that makes it a great option for outdoor picnics, traveling or even lunch boxes.

Any way you look at it…it’s a winner all the way!

Assembling the Pau:

Measure out small lemon size pieces of dough (I used 0.75 oz each). Flatten slightly (not too much). Place one no fry vada in the middle.

Gently pick up corners to enclose the vada inside the dough.

Pinch to seal corners.

Flip the filled Pau to bring smooth surface on top, gently, and place them close to each other in a greased baking dish.

Allow them to proof/rise till they become puffy about 20 minutes. Brush them gently with milk.

Place a generous spoonful of dry garlic chutney pwdr on top of each Pau.

Be liberal…as some of it will brush off!

Baking the Pau
Place baking dish in the oven at 400F for 15 minutes.

Increase heat to 450F and broil for 2 minutes. Be careful and watch them carefully, or they might burn from the top.
When desired level of browning is reached, take out of oven and brush with butter/olive oil.

After 5 minutes flip Paus out of baking tray and cool on wire rack. Do not leave in the baking tray for too long, or the bottom might turn soggy.

After 15 minutes…they are ready to serve.
