Palak ki Chaat

imageLip-smacking Kadak, Kurkuri Palaki ki Chaat, Dahi Chutney ke Saath!

As I bite into the crrrunchy crisp sweet n sour treat…Mmmm, I am transported to my fav childhood chaat corner…which specialized in making this delicious treat!

This is also a Great Gluten-free Chaat alternative for those with dietary restrictions….so even they can indulge.

Method:
Pinch stems off Fresh palak leaves. Wash, drain and spread out on a paper towel.

Meanwhile make a relatively thick batter using besan and water.
Add salt and red chili pwdr to taste. Also add a hefty pinch of baking powder to the mix.

Dip each palak leaf, one by one into the besan batter.

Make sure that the batter covers the palak leaf completely

Hold from one end to let excess batter, drip away.

Gently slip into hot oil..

and fry on medium high, till golden crisp.

Drain oil, carefully…

Rest on paper towel and stand for 3-4 minutes.

Now drizzle chilled dahi, imli ki chutney, green chutney on top, sprinkle lightly with kala namak, lal mirch and bhuna jeera pwdr…serve immediately!
