Sabut Moong Dal with Spinach

A simple quick hearty lentil stew loaded with spinach…which has been a fav since childhood. I like it so much that I eat this by the bowlful! 🙂
I love to eat this …like a lentil stew by topping it with some kuchumber salad and nimbu adrak…makes a delicious light lunch option!

Method:
Chop 1 small onion, 1 tomato. Mince 1/2 inch ginger and 2 cloves of garlic (optional)

Wash and drain 3/4 cup Sabut (whole) Moong Dal.

Wash and finely mince 1 bunch of spinach.

Put all the above ingredients in a pressure cooker along with a couple of green chillies (if you like). Add 4 times water, 1/2 tsp haldi and salt to taste.

Pressure cook for two whistles. When the steam releases, open cooker and stir gently. Add a chaunk of hing, jeera, lal mirch with some ghee…ready!
Serve it warm with roti/rice or enjoy it like a lentil stew, like I do…any way you eat it, this is just delicious!!
