Cheesy Baked Bean Burrito

A hearty make ahead one dish meal that is quite impressive, yet easy to put together! Makes a wonderful hot meal to come home to…for those cold chilly evenings that tell you winter will soon be here…Brrrrrr!!
This recipe comes from my friend Kajal who is fantastic at quick no muss, no fuss everyday homestyle cooking!

Method:
For the Beans…
Heat oil, add chopped onions and sauté till transparent, add chopped tomatoes & jalapeños and cook till soft. Now add boiled Pinto Beans (Rajmah), salt, paprika, oregano, ground cumin and simmer till thick.

For the salsa..
Heat oil, add chopped onions and sauté till transparent, add chopped tomatoes, red peppers (optional) & jalapeños, salt, paprika, oregano, ground cumin & a little sugar and simmer till thick n glossy.

Assembly:
Mix cooked rice with beans and keep aside. Now take big tortillas, place the rice n bean mix in the middle, top with a dollop of salsa and fold into little packets or rolls…your choice! Place in a baking dish. Top with a layer of salsa, then grated cheese and then chopped scallions. Bake in a 425 degree oven for 25-30 minutes…and serve piping hot!

PS: You can substitute tortillas by making large soft rotis using dough made with atta and maida in the ratio of 1:1
