Chilled Creamy Spinach Soup with a hint of spice…a feast for your eyes and your taste buds! I find it an absolutely delicious and drink it by the bowlfuls….yum yum!! 🙂
Method:
Clean and remove stems from 1 big bunch of spinach.
If possible try get baby spinach, that works best for this recipe.
Wash drain and transfer leaves to a microwave safe bowl.
Cover and Microwave for 2-3 minutes.
Immerse in ice cold water to cool.
Once cool, drain spinach. Squeeze out all water and transfer to a blender. Also add 1/2 inch ginger and 1/2 a green chilli.
Also add 1 1/2 cup very thick dahi (I like to use slightly sour dahi)
Blend till smooth. Open blender check consistancy, add another 1/2 cup dahi, if you like.
Add salt to taste…
Serve chilled with a sprinkle of freshly cracked black pepper and little swirls of thick dahi!
PS: Avoid over-seasoning the soup, the flavors of ginger and green chilli should be subtle (unlike a raita where the flavors are more robust) and in the back ground!
