Warm Spring Salad

Garden to table!
Warm Spring Salad….
Made with fresh radish greens from my kitchen garden!

You can use baby spinach or tender kale instead of radish greens if you like.

4 cups of fresh tender radish greens roughly chopped
4 cooked sausages of your choice sliced

1/2 cup red radish quartered (optional)
1/2 cup red pepper sliced thin
1/2 cup mushrooms sliced thin
1/4 cup red onion slices thin
3/4 cup Baby potatoes cooked eldente and sliced
2 tsp thinly sliced garlic
1 Jalapeno finely chopped
For seasoning: Salt, coarsely ground pepper and oregano to taste.

Season and broil the vegetables (except the radish greens) and sausages for 7-8 minutes at 500F.

Toss them with the chopped radish greens along with the juices released while grilling.

Serve immediately!
