Detailed method given below….


7-8 medium sized potatoes, boiled and peeled, but kept whole.

1 cup fresh tomato puree

1/2 inch ginger

2-3 green chillies

1 heaped tsp cumin

2 pinches of heeng

1/2 tsp each of haldi and red chilli pwdr

1/4 tsp Dhania powder

1/8 tsp garam masala

Heat 2 tsp oil + 2tsp ghee.

Add heeng and cumin,

follow with the whole boiled potatoes. Sprinkle salt and haldi and cook on medium heat….

till they they turn golden from all sides.

Add the tomato puree and the spices…

and bhuno till Masala leaves oil.

Mash potatoes roughly…

into small pieces.

Add 2 cups water and bring it to a slow simmer. Cook for 15 minutes.

Once the curry thickens slightly, sprinkle freshly ground dhania on top.

Serve hot with your fav poori/parantha/kachori.
