So how many of you have faced a Dahi/yoghurt failure situation?

You boil milk, cool to luke warm…add starter and keep aside to set.
However hours later….milk is still not set!!
Well, I have a tried n tested remedy that I’ve been using for more than 15 years, which I would like to share with you! 🙂

Just transfer the milk (to which you had added starter, a few hours ago) into a microwave safe bowl, preferably one that has a lid.
Now Microwave without lid, for exactly one minute.
When you take the bowl out of the microwave, you will see that the mix has already started to set. At this stage, do not stir the mix (this is important!)
Gently cover the microwave safe bowl with lid and leave undisturbed in a warm corner for 3-4 hours. Once set, refrigerate for another couple of hours…and it’s ready to be enjoyed!

  1. That’s the BEST tip ever. Sometimes, I face this situation where the Dani doesn’t set. I add some more starter and keep it in the toaster oven (warm setting for 20 minutes) and leave it for an hour or two. But microwaving the unset Dahi is brilliant. Thank you! Love all your recipes.
