Simple Kashmiri Turnip with Greens

Farm Fresh Organic Turnip cooked with its greens, using the most minimal ingredients, Kashmiri Style…Yum Yum!
Team it with some plain steamed rice…for a simple wholesome satisfying meal!

Method:
Preparation…
Wash, scrub and clean turnips. Trim ends and peel outer skin.

Cut each turnip into half and slice thinly lengthwise.
Wash turnip greens to remove all grit and chop finely.

To cook…
Heat 2 tsp mustard oil to smoking point. Take off heat and cool slightly.
Now put it back on low heat. Add a hefty pinch of hing and 2 dry whole red chillies. Cook for a minute.

Remove chillies from the oil and keep aside.
Now add the sliced turnips to the oil and cook on medium heat till they become lightly golden.

Meanwhile blanch the turnip greens in boiling water along with a pinch of baking soda for 3 minutes.

Immerse in cold water to cool. Drain water and reserve greens.

Once turnips acquire some color, add the greens along with the fried red chillies and some salt.

Also add about 1/2 cup water. Cover and cook for 5 minutes.

Now remove cover, cook for another 2 minutes to reduce juices and concentrate flavors.

Drizzle a tsp of raw mustard oil on top if you like..

Serve with steaming hot rice or garma garam roti!

I like to eat it with rice….mashing the turnip and greens with my fingers…Mmmm!
