Method:
Clean devein jumbo shrimp leaving tails intact. Cut pineapple into flat chunks. No need to peel the pineapple, the pineapple skin provides great texture contrast and adds to the visual appeal. Toss shrimp with oil, salt, pepper and lemon juice and lemon zest.Skewer alternatively with pineapple chunks, taking care to skewer in both ends. Heat grill on high. Grill shrimp on one side, Baste generously with marinade. Flip and cook on other side till done. Serve hot immediately!
For the marinade…
2 tsp dark soy sauce
2 tsp honey
1 tsp Sriracha Sauce
1 tsp fish sauce
A few drops of sesame oil
Some chopped fresh basil
Mix together all ingredients and use for basting.
