Turkish Chilli-Herb Oil

imageThis delightful herb oil can be served as a flavored dipping oil with bread. Use it as a dressing for tossing pan seared shrimp/mushroom/Tofu or as a marinade for lamb or fish….it’s a winner all the way!

Method:
You will need…

Coarsely pound or process in a blender…2 tbsp flat leafed parsley, 1tbsp mint, 2 tbsp. dill, 3 big chillies, 2-3 cloves of garlic, 1/2 tsp all spice powder, 1 tsp cumin & salt into a coarse mix using a little extra virgin olive oil.

Do not make the mix too fine….it should have a slightly coarse texture to it.

Store in an air tight container topped with some extra olive oil.

This can last in the fridge for a month or two…so go ahead & make a big batch!
Or you can freeze in ice trays,

into little cubes

and store in a freezer bag for many months!
