My Quick Simple Semi-homemade Achari Marinade…a complete flavor burst for your senses!
Use it with Chicken, Paneer, Par-boiled Alu,Tofu, Gobhi, you just can’t go wrong with this one!!
Over the years, this marinade has been tried, tested and approved by countless number of friends n family!
Here I detail step-by-step, how I use it for chicken drumsticks, to make my delicious ACHARI TANGRI KABABS!!
Method:
Start with semi-frozen chicken drumsticks as they are easier to clean and score.
Grab drum stuck with a paper-towel to pull out outer skin. Less messy, better hold!
And you have a clean drumstick with very little effort! Wash, rinse n drain the chicken with a tablespoon of vinegar. Wipe clean to remove all moisture.
Next make deep diagonal slashes on each drumstick, to help marinade penetrate within.
As the drumsticks are semi-frozen, it is easier to apply clean uniform cuts, quickly and easily.
Now sprinkle the drumsticks lightly with some salt, red chilli pwdr, lemon juice and mustard oil. Keep aside for atleast an hour.
Meanwhile prepare the achari marinade.
For the achari marinade…Process 1/2 cup hung yogurt with 1/2 cup caramalized onions and 1/2 cup punjabi style mango pickle….masala and mango pieces but remove any seeds (I use store bought, preferred brand, Mother’s recipe) along with 1 1/2 inch ginger and 1 whole bulb of garlic. Grind the mix, till it becomes a smooth paste. Check and adjust salt as needed.
Toss the chicken drumsticks in the above marinade.
Let the chicken marinate for another couple of hours.
Grill in oven or BBQ for about 25-30 minutes.
Serve warm with nimbu and lachcha pyaz!

For making caramelized onions…Heat oil in a pan, cook thinly sliced onions on medium low till golden.
