Use it with Chicken, Paneer, Par-boiled Alu, Tofu, Gobhi, you just can’t go wrong with this one!!
Over the years, this marinade has been tried, tested and approved by countless number of friends n family. Here I share step-by-step, how I use it to make delicious air-fried achari chicken tikke!
PS: if you do not have an air fryer you can cook them in your oven or bbq grill too.
Method:
Take 1 kg boneless chicken thighs cut into small 1 inch pieces.
Sprinklethem lightly with some salt, red chilli pwdr, lemon juice and mustard oil. Keep aside for atleast an hour.
Meanwhile prepare the achari marinade.
For the achari marinade…Process 1/2 cup hung yogurt with 1/2 cup caramalized onions and 1/2 cup punjabi style mango pickle…masala and mango pieces but remove any seeds (I use store bought, preferred brand, Mother’s recipe) along with 1 1/2 inch ginger and 1 whole bulb of garlic. Grind the mix, till it becomes a smooth paste. Check and adjust salt as needed.
Toss the chicken pieces in the above marinade and let the chicken marinate for another couple of hours.
Next preheat the air fryer for 5-6 minutes at 390F.
Skewer chicken,
squeezing pieces tightly together. This prevents individual pieces from drying out.
and place the skewers on their rack. Line air fryer basket with foil if you want easy clean up.
Place stand along with the chicken skewers in the air fryer.
Cook for 15 minutes. Then flip skewers and cook for another 8-10 minutes or until golden.
Transfer skewers on serving platter…
Serve warm with hari chutney and lachcha pyaz!
PS: here is a pic of the foil used to line the air fryer basket…helped catch all the drippings, making cleanup a breeze!
