Guilt-free Alu Bonda!

Crrrunchy delightful Mini Alu Bondas made in the appe pan…they were so good, I easily polished off a dozen đ

Method:
For the vadas/ alu bondas…
Roughly pound ginger, garlic and green chillies to a coarse paste. Heat oil, add rai, Kari patta and the chilli paste.
Cook for a minute, add mashed potatoes, haldi and salt followed by lots of freshly chopped dhania. Mix to combine.
Cool and form the mix into small round balls.
Make a slightly thick batter with besan, salt, red chilli pwdr, haldi and 1/2 a tsp of baking pwdr.
Put a drop of oil in each cavity of appe pan and heat the pan till it becomes nice n hot. Dip each potato ball into the besan batter to cover completely.
Drop 1 ball into each cavity. Reduce heat to medium low and cook the vadas/alu bondas patiently till crisp.
Serve with the usual suspects…hari chutney, fried mirchi, dry chutney powder and garma garma garam chai! đ
Recipe for Chutneys
For the green chutney…
Grind fresh dhania, with green chillies and a small piece of ginger. Add salt, a little sugar and lemon juice to taste.
For the dry garlic chutney…
Grind khopra (dry coconut) garlic and red chilli powder. Heat oil and roast the mix for a couple of minutes. Mix in some crushed besan boondi to add bulk, and some salt to taste…..ready.
For the fried green chillies…
Slit green chillies. Toss lightly in salt and deep fry.
