Method:
Peel, wash and slice Arbi thinly, deep fry on medium flame till golden. Immerse in two taar chashni and cook till dry…..spread on parchment till cool and crisp!

Two taar chashni refers to making a thick sugar syrup. You add a drop of this syrup to cold water, then press the drop between two fingers and stretch….you should be able to see 2 strands emerge. Once the syrup reaches that consistancy, the fried Arbi chips are added and cooked for 2-3 minutes to coat well.
