Healthy, made with whole wheat flour, desi ghee and loads of nuts…the perfect winter treat for the whole family.
Here’s how I make it…
You will need:
4 cups whole wheat flour
1/2 cup Sooji
1/4 cup each of almonds, cashew nuts, pistachios, walnuts and makhane.
Gond 1 tbsp (optional)
Shakkar/ground sugar/brown sugar according to taste
1 tsp ground dry ginger
1 tsp ground cardamom
Ghee made from 1 pound butter.
Method:
Heat ghee on low flame
add atta and sooji.
Roast on low flame l, stirring often…
till lightly golden and aromatic.
Take off heat and keep aside to cool slightly.
Stir 2-3 times so it does not burn from the bottom.
Meanwhile heat 2 tbsp ghee, fry the gond till it swells up.
Then fry almonds
Walnuts
Cashew nuts
Pistchios
And lastly the Makhane.
Crush/chop all the nuts, I used a chopper.
Add the chopped nuts into the roasted flour along with the ground cardamom and ginger.
Also add sugar to taste…I used brown sugar.
Form into tight small lemon size balls/laddus.
Store in an air tight container.
They should last you all winter through…so go ahead and make a big batch.
PS: This recipe makes about 50 small laddus.
