Cajun Grilled Chicken Fajitas kicked up a notch with smoky peppers, creamy avocados and some spicy fresh salsa verde…yum yum!

Spicy Grilled Chicken, over Smoky Hot peppers, onions and mushrooms all encased in a soft juicy tortilla with the Chipotle sour cream pushing it just over the top…..Mmmm, irresistably yumm!

Method:
Thinly slice boneless chicken breast by sliding a sharp knife horizontally through it. Spread a generous amount of Cajun rub on a shallow plate.
Press the sliced chicken on the rub, to cover completely on both sides.
Preheat grill to the highest setting and brush with oil.
Sear chicken on the grill 4 minutes on one side
and then another 3-4 minutes after you flip.
Now transfer chicken to a cutting board and let it rest for 4-5 minutes to let the juices redistribute. Then slice thinly.
Toss sliced onion, mushroom, peppers, jalapeños in some cajun seasoning. Grill vegetables on the hot grill pan till done…but still slightly crunchy.
Warm tortillas, Spread a generous spoonful of the chipotle sour cream. Top with grilled veggies and the sliced grilled chicken.
Sprinkle some shredded cheese and salad (chopped lettuce, onions, tomatoes, avacados etc).
Roll tightly and serve immediately!!
For the Chipotle Sour cream…
Mix some sour cream (you can also use Greek yoghurt, if you are watching your calories) with chipotle hot sauce & minced jalapeños.
If you like you can also add a generous drizzle of Spicy fresh Salsa Verde!
For the salsa verde…
Mince 5-6 tomatillos, along with 2 fistfuls of cilantro, 2-3 cloves of garlic, a piece of jalapeño and 1/4 cup onions in a chopper. Add salt to taste..Ready!
For the Cajun Seasoning…
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons dried oregano
2 tablespoons dried basil
1 tablespoon dried thyme
1 tablespoon fresh ground black pepper
1 tablespoon white pepper (or use 2 tablespoons black pepper)
3 teaspoons cayenne pepper
5 tablespoons paprika
4 tbsp salt…can vary according to taste
Mix all ingredients in a glass jar. Store in the refrigerator to keep the spices fresh.
Shake the jar before using.
Note: you can substitute paprika with Kashmiri lal mirch and cayenne pepper with red chilli pwdr.
