Who would have thought that Quinoa & Udad Dal could together create such wonderful magic!
A Dosa for all those who are trying to watch their carbs!!
Method:
Soak 1 cup udad dal, 1 tbsp Chana dal, 1 tbsp moong dal, 2 cups Quinoa and 1 tsp methi dana overnight.
Grind into a smooth thick paste and add some salt to taste.
Ferment overnight. Stir the batter, adjusting water and salt to make a thin spreadable batter.
Spread out on hot nonstick pan like any regular dosa, drizzle a few drops of oil, cook for 1-2 minutes on medium heat (the Quinao dosa browns very quickly, so if you want it a little crisp…..cook it on low heat)
Roll and serve hot with hot Sambhar & fresh coconut chutney!

have you checked the actual amount of carbs in one dosa as opposed to the normal dosa? that would be good to know. thanks

then how can you say it is carb-concious dosa? to the best of my knowledge quinoa is full of nutients, it is an ancient grain and is very good for health.
but when you read the nutrient info it has a fair amount of carbs just like any other grain wheat or rice.
may be you should get it checked or add it up to calculate for one dosa.
By carb-conscious I mean it is for those who are careful about the quality of carbs they consume…I do not say that it is carb-free! I think that you might have misinterpreted the meaning of carb-conscious!! 🙂
yes., it is the quality of carbs that matter.
one does not expect quinoa to be carb free.
in fact there is no such thing as carb free.
there are some low carb recipes. but quinoa is healthy.
and full of nutrients.

Per Serving: 161 calories
carbs 24 gm
fat 4 gm
protein 7 gm
sodium 121mg
fibre is 5gms per serving. this is if you make twenty dosas out of the whole batter. and use 50gms of oil to make all the twenty dosas.
Can you tell me If I ca use quinoa flour instead of grains. Great insight btw on carb content by one of the readers!
I guess you could. But I prefer using grains.
can we make dosa,without fermentation ?

Thanks for the quinoa dosa recipe. I tried the batter and it fermented very well. However, when I am trying to make dosas they are not coming very crisp. What could I be doing wrong?
Cook on medium low flame patiently…you will get crisp Dosa.
