Veg crudités with creamy dips are a delicious anytime snack during summer! However most dips are loaded with sour cream and you end up consuming a whole lot of unwanted calories! Try this healthy Cucumber Avacado Dip…it skips the cream using healthy Avacado instead!
Method:
Heat oil, add 3 stalks of spring onion and a clove of chopped garlic. Sauté for 2 minutes.
Now add 1 big sliced cucumber (with seeds scooped out) and 1/2 a minced jalapeño. Cook till soft.
Cool and blend with 2 tbsp yogurt, one ripe avacado and a handful of fresh cilantro and mint.
Add salt and lemon juice to taste, garnish with some chopped tomato and scallion.
Serve with celery , carrots, broccoli, peppers…yummm!
