Here’s sharing my all time fav breakfast with you…something I make when I’m clearly in the mood to indulge 🙂
Thin layer of crispy potato..topped with eggs over easy ….Mmmm!
Cut your self a piece…
Team with a quick spinach mushroom sauté and some toasted bread…….heavenly! 🙂
You can even make it personal size, with a single egg
Do give this delicious healthy combo a try….you might enjoy it even more than me!
Method:
Heat oil, sear sliced potato in a single layer.
Cover and cook till tender and almost cooked through.
Break egg in the middle.
Garnish with colorful peppers…Or scallions if you like.
Sprinkle with salt n pepper and crushed red pepper if you like.
Cook till eggs are set, and bottom is golden & crispy.
Mmmm, hands down my fav breakfast/brunch ever!!
