A delightful gluten free alternative to Guacamole n Chips…. ready in 5 minutes!
Red juicy Heirloom Tomato topped with creamy rich Avacado, fresh cilantro, slivers of onion and a dash of paprika!
As I pulled out the ingredients to make this, my daughter went to the pantry to get the chips.
I casually said… Mansi, you won’t be needing them! She looked at me surprised…What? How can we have Guacamole n Chips without the chips!!
I just smiled quietly….prepared a big platter of these & placed it in front of them.
The kids gorged these down in 2 minutes flat.
Hey, I said, what about the chips….
Who needs them, screamed the two to one happy mom! š
Method:
Slice tomato, sprinkle with salt n pepper. Peel and scoop out ripe Avocado.
Mash a little with a fork, still leaving it a little chunky.
Toss gently with sliced onions, salt and lemon juice.
Top sliced tomato with the onion avocado mix.
Garnish with chopped cilantro.
Finally a dash of paprika or some finely minced jalapeƱo and a squeeze of lime…serve immediately!
Note: Using fresh ripe juicy & firm tomatoes is key!
