Presenting Indori Bhutte ka Keese
A traditional very popular dish from Indore that celebrates season’s best corn!
It is as unique in its preparation as it’s origin. This is my mom-in-law’s speciality and here I share her quick n easy microwave approach to the recipe 🙂
By Mom-in-law
Method:
Grate about 2 cups corn or alternatively coarsely pulse corn kernel in chopper. Mix with 1/3 cup milk and microwave for 2-3 minutes.
Fluff up by forking it.
Put another 1/3 cup milk.
Cook for another 2-3 minutes.
Fluff up again & cool.
Next, heat a tsp of oil, splutter rai, add finely chopped onions & green chillies and cook till transparent.
Now add the cooled corn and bhuno for 7-8 minutes.
Garnish with freshly chopped dhania and a squeeze of lime!
Do not make it too dry..The final result should be moist, almost poha like!!
