A Delicious Pulao that celebrates the humble Lauki/ Doodhi at its glorious best! A childhood favorite that I still love to eat, it’s a great idea for fussy kids who sneak past their veggies…As the rice cooks, the lauki melts into it becoming invisible to the eye, leaving behind awesome flavor and nutrition!
Method:
Wash and drain 1 cup rice. Grate 2 cups lauki/Doodhi, 1 inch ginger and slit 2-3 green chillies.
Heat some ghee/oil, add a tsp of jeera followed by the grated ginger and slit green chillies. Cook for a minute. Now add the grated lauki and 1/4 tsp haldi cook for 2-3 minutes till most of the juices reduce.
Add the soaked and drained rice and salt to taste.
Stir gently and cook for another 2 minutes.
Now add 2 cups of water along with a generous squeeze of lime and bring to boil. Reduce heat to a gentle simmer. Cover and cook till rice is cooked through.
Garnish with fresh dhania and sliced lime, serve warm with dahi/Raita.
