Lauki Tamatar ki Sabzi….diced lauki cooked in thin tomato curry!
Light simple wholesome home food, perfect for any weather!
Made with minimal ingredients, lightly steamed…it’s quick to make and one of my fav choices for a light lunch! 🙂
Method:
Peel n wash a medium size lauki
Dice into half inch cubes.
Heat 2 tsp of ghee in a pressure cooker. Add a pinch of hing and a tsp of jeera and cook till jeera spotters. Then add a tsp of finely chopped ginger and green chilli. Follow with the diced lauki.
Add salt, 1/4 tsp red chilli pwdr, 1/4 tsp haldi. Stir to mix and cook for a minute.
Add 1 tomato puréed along with 2 tbsp water.
Close pressure cooker and steam for 1 whistle.
Place cooker under a light stream of tap water, to release steam.
Now open cooker, the lauki will be cooked, but slightly eldente.
Add freshly chopped dhania. Simmer for 2-3 minutes.
Add a pinch of garam masala if you like…serve warm with Roti/Parantha.
