Sharing some of my fav marinades for the bbq season. Making them ahead of time keeps your grilling time quick, simple and fuss-free!
You can make them in bulk….add labels,
And freeze them in single use portions for upto 3 months
White Malai Marinade
1/2 cup Sour cream/cream
1/4 cup thick yogurt
2 tsp Garam masala
2 tsp white/black pepper
2 tsp chatmasala
1 tbsp Minced Green chillies/jalapeno
2 tbsp Ginger garlic paste
2 tbsp Lemon juice
2 tsp Pink salt
1 tsp white salt
Hariyali Marinade
2 cups mint (packed)
1/2 cup yogurt
1/4 cup malai/heavy cream
2 tsp white/black pepper
2 tsp chatmasala
2 tsp garam masala
1 tbsp Minced green chilli/jalapeno
2 tbsp ginger garlic paste
2 tbsp lemon juice
2 tsp Pink salt
1 tsp white salt
Achari marinade
1/2 cup thick yogurt/greek yogurt preferred
1/2 cup caramalized/fried onions
1/2 cup punjabi style mango pickle masala and mango pieces but remove any seeds
2 tbsp ginger garlic paste
Grind the mix, till it becomes a smooth paste.
Check and adjust salt as needed.
Amritsari Fish Marinade
3/4 cup thick yogurt
1 tsp red chilli pwdr
1/2 tsp haldi
2 tsp ajwain coarse gr
1 tsp methidana coarse gr
2 tbsp ginger garlic paste
2 tbsp lemon juice
1 tbsp mustard oil
1 tbsp besan

Important Tips for Grilling
1) To thicken any marinade add besan/maida
Red…besan
White/green maida
2) Cook a tsp of marinade in micro wave for 5-6 sec and adjust to taste.
3) Marinade should taste strong ..as in salty sour n spicy. It mellows down when used.
4) Adding Oil to marinade, extends it’s life
5) Wash all meats/fish in water to which a tbsp of vinegar has been added. Helps remove unpleasant odors and kills germs.
6) Drain and pat-dry all meats before marination.
As far as possible try to have uniform pieces of meat.
7)Make slits/poke with fork for thick cuts.
8) For best results two rounds of marination are recommended for chicken. 1st round marinate with salt, ginger garlic paste and lemon juice for atleast 1 hour. Then drain all juices and proceed with your choice of 2nd marination for another hour.
9) Spray oil on baking pan/ foil to avoid sticking
10) Final basting with butter/ghee adds the X Factor.
