Quesadillas Go Punjabi…Balle Balle!
Spicy Paneer Quesadillas Punjabi Tadke ke Saath…the result of a fun impulsive experiment that produced fabulous results! Oh cooking can be so much funnnn! 🙂
Method:
For the red sauce….
Make basic ginger(optional), garlic, onion, tomato, green chili punjabi tadka with some olive oil and jeera ka chaunk. Add salt, red chilli pwdr to taste. Mix in a couple of tsp of Maggi hot n sweet tomato ketchup.
For the filling….
Crumble some fresh paneer. Add finely chopped onions, chopped dhania, salt, red chilli pwdr and a squeeze of lime.
Grate some cheese.
For the assembly..
Take two medium size flour tortillas or two big rotis.
Spread the red sauce on one of them. Spread the paneer filling on the other. Lightly sprinkle some cheese on top of the paneer. Close with the red sauce tortilla. Cook on medium flame with a spray of oil, till crisp…pressing down with a ladle.
Cut into wedges. Garnish with a blob of sour cream and cilantro, sprinkle with paprika and serve immediately!
