Juicy red ripe tangy tomatoes…lets celebrate them in their purest form with the most minimal spices or seasonings!
Sharing mom’s simple tomato rice, a dish with clean simple flavors…it’s very aroma makes me revisit childhood! 🙂
Method:
Heat some ghee in a thick bottomed pan.
Add jeera and wait till it crackles.
Add washed and drained rice and stir.
Cut a cross on top of a big tomato, leaving bottom intact.
Place the tomato in the middle of the rice.
Insert green chillies in the cut slits of the tomato.
Add twice the amount of water to the quantity of rice.
Add salt to taste. Also sprinkle some salt on the tomato and chillies too.
Bring the water to rolling simmer.
Reduce heat to low and cover with a tight fitting lid.
Cook till all-most all water evaporates and rice is cooked through. Rest for 10 minutes…serve warm!
Serving suggestion:
Cut wedges of the cooked tomato and and serve along with a green chilli and the rice.
Squeeze the juices of the cooked tomato and the green chilli into the rice…mix in some yoghurt if you like….Mmmmmm!
