Spicy Aromatic Garlic Herb Butter
Delicious on toasted bread or sandwiches, a wonderful addition to pastas/rice or an aromatic addition to grilled/poached fish…Mmmm you can think of endless ways of using it!
You will need…
1 large bunch of parsley or your herb of choice (like chives, basil or dill)
1 whole garlic
Salt n coarsely ground pepper according to taste.
2 sticks butter (about 225gms), sliced into chunks and a little olive oil.
Method:
Pluck out leaves and discard stem. Wash parsley to remove all grit.
Peel the cloves of garlic.
Transfer the parsley and garlic to a chopper.
If you want to add a spicy Desi twist, add a couple of green chillies too!
Also add a light swig of olive oil, about a tbsp.
If you like you can use carmalized garlic in this recipe too…it adds a wjole new dimension!
Pulse chopper to mince the parsley and garlic.
Now add the chunks of butter, salt n coarsely ground pepper.
and pulse a few more times, till it becomes a smooth paste.
Now your herb butter is ready to use. This butter will last easily in your fridge for about a week. Or like me you can make a large batch, freeze in your ice cube tray. I use silicon trays, which make un moulding the cubes so much easier!
I top each cube of butter with a couple of drops of oil. Later, while using…it helps make the butter more easily spreadable! 🙂
Once frozen, remove frozen herb butter cubes…
transfer into freezer bags and store in your freezer for upto 6 months!

Should we use room temperature butter or cold butter here ??
Slightly softened cold butteris best!
