Hot SPROUTED METHI PANEER PARANTHAS with unparalleled aroma and flavor….Mmmm heavanly!
The idea of using the delicate methi sprouts, packed with nutrients n flavor in some kind of parantha preparation had been haunting me for quite some time. So today, I finally decided to give it a go….adding soft creamy paneer (a last minute inspired idea), complimented the slightly bitter taste of the sprouts beautifully! Rarely am I so happy with my tinkering in the kitchen as I was today…even my 11 year old daughter simply loved them! 🙂
Method:
Take 1 heaped cup methi sprouts.
Add 1/3 cup chopped onions and 2-3 finely chopped green chillies.
Salt, red chili pwdr and amchoor according to taste.
Also add 1 cup grated paneer.
Mix nicely, taste and adjust seasoning as needed.
Now divide dough into small marble size balls.
For each Parantha you will need 2 small balls. Roll each ball into a very thin circle.
Now place a liberal amount of filling on one circle.
Cover with the other circle,
and carefully seal corners…using the tip of your fingers.
Dust lightly with flour.
Roll lightly to make a bigger circle of dough.
Transfer to hot tava and shallow fry using a liitle oil.
Transfer to serving plate. The Parantha is made in 2 layers, you can even separate the top layer from the bottom…to see the delicious filling peeking from inside!
