I chanced upon this super simple recipe a couple of years back, on a visit to India. My mom was taken ill and our cook, Ambika would make this delicious light soup for her morning and evening to help her recuperate!
Method:
Pressure cook about 300 gms yellow/white onions along with about 1kg Campari/ Desi (read good sour) tomatoes and a little water for 5-6 whistles. Purée, strain, add a dash of salt n pepper…bring to boil, ready!
PS: For the stunning red color you see in the pic, be sure to use fresh ripe red tomatoes!
For a kid friendly twist, boil some alphabet pasta and add into this soup….it’s always a hit with them! 🙂
How much water for pressure cooking?
About 5 cups of water should be sufficient.
