YAKHNI MUTTON PULAO
Soft melt-in-the-mouth meat along with delicately spiced rice. A wonderful easy recipe from Mom’s collection, its a mild flavorful alternative to Biryani.
Method
Pressure cook 1/2 kg mutton along with 2 onions thinly sliced, 1 piece cinnamon, 4 cloves, 4 black cardamom, 1 tbsp ginger-garlic paste, salt and about 11/2 cup water. After mutton is completely cooked, strain the mutton stock and keep aside. Remove whole spices from the mutton and saute it lightly with some ghee, salt (as required), 1 tsp red chilli powder and 1/2 tsp pepper. Heat another pan and add 1 tsp jeera, 3-4 green cardomom and 1 bay leaf along with 2 onions thinly sliced.
Saute till onions are light pink.Then add 11/2 cup washed and drained rice and the mutton stock, cover and cook till stock evaporates. Then layer rice with mutton and about 1 cup milk (u can soak 1/4 tsp saffron in it if u like). Sprinkle dry pudina on top as a finishing touch…Then put a tight lid on the pan and place the pan for dum on a preheated tawa on low flame for 20 minutes. Garnish with fried onions and a sprig of fresh mint and serve hot with mint raita.

For one cup rice, use 1 pound mutton.
