How I make it…
(Makes 4 servings)
4 large eggs
1 12-ounce tray button mushrooms (sliced)
1 tbsp butter
1 tbsp flour
1 cup milk
2-3 tsp grated parmesan cheese/amul cheese
Salt n pepper to taste
1 green chilli minced
For the cheese sauce…
Heat butter on low heat till just melted. Add flour and roast for a minute and then wuickly add the milk. Simmer, stirring constantly till thick and coats back.of spoon. Add the parmesan cheese. Taste and add salt n pepper as needed. Set aside.
For the creamy mushrooms…
Heat 2 tsp of oil. Add the dliced mushroons and sear on medium high. Do not add salt or they will become soggy.
Once mushrooms acquire some color add 2 heaped tbsp cheese sauce. Mix to combine.
Toast 4 slices of bread and spread with butter.
Spread a generous layer of creamy mushrooms over each slice. Place a crunchy fried egg on top and serve immediately!
