Lauki ka Pulao

imageA Delicious Pulao that celebrates the humble Lauki/ Doodhi at its glorious best! A childhood favorite that I still love to eat, it’s a great idea for fussy kids who sneak past their veggies…As the rice cooks, the lauki melts into it becoming invisible to the eye, leaving behind awesome flavor and nutrition! imageimage
Method:
Wash and drain 1 cup rice. Grate 2 cups lauki/Doodhi, 1 inch ginger and slit 2-3 green chillies.

Heat some ghee/oil, add a tsp of jeera followed by the grated ginger and slit green chillies. Cook for a minute. Now add the grated lauki and 1/4 tsp haldi cook for 2-3 minutes till most of the juices reduce.

Add the soaked and drained rice and salt to taste.

Stir gently and cook for another 2 minutes.

Now add 2 cups of water along with a generous squeeze of lime and bring to boil. Reduce heat to a gentle simmer. Cover and cook till rice is cooked through.

Garnish with fresh dhania and sliced lime, serve warm with dahi/Raita.
