Tangy Orange Salad with Red Onions and Chives!
Tried many versions of this….but this time around…it came out just Purrrrrfect!!

Method:
Slice red onions very thin. Put them in a bowl and toss with some red vine vinegar, salt & pepper and stand for 15 minutes. Meanwhile peel and slice oranges, sprinkle with salt & pepper. Tilt onion bowl to drain excess juices. Gently mix the onions with the oranges….sprinkle with freshly chopped chives…Ready!
PS: you can substitute chives with mint.
Make a big batch…or you are sure to run out!!
