Mutton Yakhni Pulao… Mom’s recipe and a Childhood favorite!
A mild flavorful alternative to Biryani that is sure to be a hit with all kids between 6 and 60

Method
Pressure cook mutton along with khade masale, ginger-garlic paste, salt and about half as much water as you will need to cook the rice. After mutton is completely cooked, strain the mutton stock and keep aside. Remove mutton pieces and saute them lightly with some ghee, jeera…add salt (if required), red chilli powder and pepper (I like to use white pepper). In another deep pan, heat ghee+oil add jeera, green cardomom and laung with sliced onions and ginger-garlic paste, Saute till onions are light pink. Add washed, soaked (for 15-20 min) and drained rice and the mutton stock, cover and cook till stock evaporates. Then layer rice with mutton and remaining half liquid needed to cook the rice which is milk (u can soak saffron in it if u like). Sprinkle dry pudina on top as a finishing touch…Then put a tight lid on the pan and place the pan for dum on a preheated tawa on low flame for 25-30 minutes. Serve hot with mint raita.

    Can we use chicken instead of mutton and follow the exact same recipe?? Not confident in cooking mutton at home.

      I would suggest using mutton or lamb only

      Badi elaichi, choti elaichi, dal chini, tej patta, kali mirch, laung and sometimes I include khadi lal mirch too!

      For one cup rice, use 1 pound mutton.
