5 minutes to a potful of delicious Hot Minestrone Soup….sounds too good to be true, right! 🙂
But I promise…you will absolutely love it.
I used this recipe very often when my kids were little infants, and this soup was a lifesaver, when I was feeling overwhelmed and stretched too thin!
Today Was another such day, and boy, this soup sure did come to my rescue!
Method:
In a pot add the following ingredients…
1 1/2 cup store bought marinara sauce/pasta sauce
1 cup mixed veg of your choice…like peppers, carrots, celery, beans, cauliflower etc, chopped fine.(If you like you can even use a frozen mix)
1 cup boiled chickpeas (you can use canned if u like, I keep some ready at hand in my freezer)
4-5 cups of hot water
2 tsp basil pesto.
Also add Salt n pepper to taste.
Bring the ingredients in the pot to a rolling boil.
Meanwhile…fish out a few chickpeas from the pot.
Gently mush them using the back of a spoon and transfer them back to the pot.
Simmer for 3-4 minutes…ready!

Hi, Did you do any tadka before mixing the ingredients? I can see some oil in the picture but not in the receipe.
The oil in the picture is from the Marinara sauce. I haven’t added any additional oil.
If I dont have basil pesto, what else I can use?
