Ambika’s SPICY MIXED VEGETABLE STEW!
Basic ingredients combined with a boat load of veggies and some gentle love….translate into a steaming hot pot of comforting food, perfect for today’s rainy weather! 🙂
Enjoyed best with a bowl of simple white rice….Mmmm!
Method:
Heat oil, add 1/2 tsp rai, 1/2 tsp jeera followed by 1 tsp chopped garlic and 2 tsp chopped ginger. Cook for a minute.
Add 2 diced par boiled potatoes. (I used diced microwaved potatoes)
Follow with 3 cups diced mixed vegetables of your choice. I used cauliflower, bell pepper, radish and zucchini.
You can also add eggplant or lauki, karela, drumstick etc…they taste delicious in this stew!
Add salt, 1 tsp red chilli pwdr, 1/2 tsp haldi, 1/3 tsp dhania pwdr and salt to taste. Cook for 2 minutes.
Add 3-4 medium size tomatoes puréed. And mix to combine.
Add 1/2 cup water and bring to boil.
Cover and cook for 10 minutes. Mid way, stir once to ensure even cooking of vegetables.
After 10 minutes, open cover, taste to adjust salt.
Sprinkle a hefty pinch of garma masala….serve with simple white rice!

Me and my dad loved eating this for lunch along with Dubraj Chawal (a Chattisgarhi variety of Chawal) accompanied by Ambika’s freshly pounded dhania tamatar ki chutney! 🙂
To increase the spice quotient you can add whole red chillies/green chillies.
To add protein you can add boiled chickpeas or diced paneer to the recipe.
