Inspired by a Jamie Oliver recipe
Method:
Make a bed of ham slices. Break 3 eggs, mix half an egg shell of water, salt, pepper and chopped parsley/chives. Make an extremely thin Crepe like omelette swirling the egg around the pan. Cook for a minute. Do not flip. Slide off onto chopping board. Slice with knife onto thin ribbons. Mix with baby greens and sliced fennel/onions. Top with a drizzle of some extra virgin olive oil and a squeeze of lemon.
If you like, you could top with light shavings of Parmesan cheese and a few drops of truffle oil. It takes this salad to an absolute gourmet level!
